Ingredients
- 1 pound breakfast sausage, hot or mild
- 1/3 cup all-purpose flour
- 3 to 4 cups whole milk, more to taste
- 1/2 teaspoon seasoned salt
- 2 teaspoons freshly ground black pepper, more to taste
- Biscuits, warmed, for serving
Instructions
- With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
- Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
- Spoon the sausage gravy over warm biscuits and serve immediately!

I have made this several times and everyone loves it!! Question, has anyone made it ahead and froze? That should work right? Or even make ahead and refrigerate then reheat when ready.

Made this for our Men’s breakfast at church and it was a big hit.
This is a frequent go to for me. So easy & flavorful.
Woke up at 4am and had to have this. Put it on crunchy steak fries and added cheddar cheese on top. Wow. Super delicious.
I made this today using local ground pork and it easy and delicious. I used 1 1/2 teaspoons freshly ground pepper and it was perfect for us. I could have used even more. I am curious…if those who have said it was too much pepper…used store bought ground pepper? Because that would measure differently from freshly ground black pepper, which is coarser, and I could see where that might be too much.
Also, I made drop biscuits from scratch, and paired with this gravy the meal was outstanding!
Finally, I never cook with milk, and always substitute. Today, I had 2 cups left of oat milk, and added 1 cup of (full fat) coconut milk. No one would ever know you didn’t have cow’s milk in there. I have a personal favorite oat milk that is rich. Am I allowed to name a brand here? Oatley full fat oat milk is the best! Thanks for the recipe.
