Any salad greens can be dressed with a modest bit of this; however, mesclun greens seem to pair particularly well with it.

Ingredients

  1. 3 tablespoons extra-virgin olive oil
  2. 1 tablespoon whole-grain mustard
  3. 1 tablespoon balsamic vinegar
  4. salt and ground black pepper to taste

Instructions

  1. Combine olive oil, mustard, vinegar, salt, and pepper in a Mason jar or container with a tight-fitting lid; cover tightly with the lid and shake vigorously until thickened, about 2 minutes. Taste dressing and adjust flavor with salt and pepper.
  2. If you find your mustard gets stuck at the bottom of your Mason jar, you can use a small spatula or whisk to mix it before shaking.

This is very good! I didn’t have any balsamic vinegar so I used red wine vinegar instead. Very flavorful and I only needed 1 T. On my salad!!!
