a tomato-based crimson sauce for pasta and pizza that includes sautéed vegetables. Feel free to adapt this dish as you see fit based on the fresh vegetables that are in season. Highly recommended with pizza, pasta, or chicken parmesan. If necessary, freeze sauce. Size of portions varies per dish.

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 2 cups diced carrots
  3. ½ cup diced green bell pepper
  4. ½ cup diced red bell pepper
  5. 2 cups diced onions
  6. 4 cloves garlic, diced
  7. 3 tablespoons tomato paste
  8. 4 fluid ounces red wine
  9. 2 (27 ounce) cans diced tomatoes
  10. 1 tablespoon dried oregano
  11. 1 teaspoon salt
  12. 1 teaspoon ground black pepper

Instructions

  1. Heat oil in a large pot over medium-high heat. Saute carrots and bell peppers, about 5 minutes. Add onion and garlic and saute to desired softness, about 5 minutes.
  2. Add tomato paste to the pot and distribute evenly. Pour in red wine and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon to deglaze; reduce heat to low. Add diced tomatoes, oregano, salt, and pepper. Simmer for 15 to 20 minutes.
  3. Blend the red sauce to desired thickness using an immersion blender or food processor. Simmer further for enhanced flavor, at least 1 hour, or until ready to use.
  4. If using fresh diced tomatoes and oregano, add at the end to prevent scorching.

BIG on flavor! This was pretty easy to make, at the end we added just a smidge of sugar to counteract the acid . I am sharing with my friends because it was THAT good.

10.23.20 I really liked all of the fresh veggies in this, as well as the consistency. I was around the house yesterday, so I just let it cook down for about 1-1/2 hours, and left the consistency just a bit chunky. I did add some fresh tomatoes and fresh oregano which I had on hand. This was tasty on a pizza, but I can see this as a good base sauce for so many other things just by adding additional herbs and spices. And even just for something as simple as weeknight chili macs/goulash by adding some macaroni, ground beef, chili powder, cumin, etc. Thank you for sharing your recipe, this is a good multi-purpose red sauce, much more than just a pizza sauce.
