Tzatziki Sauce -Yogurt and Cucumber Dip

To prepare this delicious cucumber dressing, drain some low-fat yogurt over night. This is a fantastic topping for grilled meat or chicken. It also makes a fantastic dip for pita chips and vegetables. One more garlic clove was added (werewolves in Florida). Removed the parsley and increased the amount of fresh dill somewhat.

Ingredients

  1. 1 (16 ounce) container low-fat plain yogurt
  2. 1 cucumber – peeled, seeded, and grated
  3. 1 tablespoon chopped fresh dill
  4. 1 tablespoon fresh lemon juice
  5. 2 cloves garlic, minced
  6. salt and ground black pepper to taste

Instructions

  1. Line a colander with two layers of cheesecloth and place it over a bowl. Place yogurt on the cheesecloth and cover the colander with plastic wrap. Allow yogurt to drain, 8 hours to overnight.
  2. Place grated cucumber in a fine mesh strainer; allow to drain 1 to 2 hours.
  3. Mix yogurt, cucumber, dill, lemon juice, garlic, salt, and pepper in a bowl. Refrigerate for flavors to blend, at least 2 hours.

Good as far as tzatziki sauce goes. It worked really well on my gyros. I don’t think I would make this sauce other than for a gyro. Tried dipping with vegetables and thought it was rather bland but for gyros, it was great.

Great recipe and easy to make. I make it often, changing the dill for mint and parsley, or a mix of herbs that I have on hand. I use Zoi plain Greek yogurt which is plenty thick. I remove excess moisture from the cucumber in a mesh strainer, pressed with the back of a spoon.

This is a solid recipe for tzatziki. If you shortcut by using Greek yogurt instead of draining regular yogurt, then I recommend that you don’t drain/squeeze the moisture from the grated cucumber – I did, and I didn’t like the consistency – too thick/dry. Otherwise delicious.

OMG, this is addicting! Couple of changes. Used Greek yogurt (no straining needed) and used about 1 tsp of garlic salt instead of fresh garlic and salt, only because we are not fans of raw garlic. This will be my go to Tzatziki sauce! Thanks for a wonderful recipe!

I didn’t drain the yogurt by mistake so that was my bad but even tho it turned out thin, the flavor was still good, but not the best I’ve had. I’m thriving for a more complex flavor I think. I’ll try it again and tweak it to see if that helps. I’m happy I gave it a go, good recipe!

Delicious! I used plain greek yogurt because I like the thick, rich flavor as compared to regular plain yogurt. I left all other ingredients as is. I will definitely make again.

Used English cucumber diced fine then squeezed water out. Used full-fat plain yogurt for richness. I will add more dill and maybe onion powder next time for more flavor.

Delicious. I have made it eith greek yogurt and normal yogurt and both are great. I omittted the dill because I didn’t have any. We love this with the spinach and feta turkey burgers from this site.

Just have to watch the liquid from the cucumbers, can get awfully wet if not squeezed and drained enough. Some of it may come from the fact that we used our own garden cucumbers. Extremely fresh
