Some individuals will live their entire lives without ever tasting the unadulterated bliss of fresh fish served with a flawlessly prepared brown butter sauce. It saddens me that so many people won’t permit themselves to enjoy this tarragon walnut brown butter sauce.

Ingredients

  1. 1 cup butter
  2. 1 onion, chopped
  3. 1 teaspoon garlic powder
  4. 2 (15 ounce) cans tomato sauce
  5. 1 (28 ounce) bottle ketchup
  6. ¾ cup water
  7. 2 tablespoons Worcestershire sauce
  8. 2 tablespoons brown sugar
  9. ½ lemon, juiced
  10. salt and pepper to taste
  11. 1 teaspoon hot pepper sauce

Instructions

  1. In a large skillet, melt the butter or margarine over medium heat. Stir in the onion and garlic powder. Saute until onions are soft. Stir in the tomato sauce, ketchup, water, Worcestershire sauce, brown sugar and Season to taste with salt, pepper and hot pepper sauce. Reduce heat to low and simmer, uncovered, for 10 minutes.

I made this sauce..at first it looked a little strange but then after really whipping it up over the stove it started to look like sauce. I had to add honey, more garlic, lemon juice and cayenne pepper to give it more “taste”…was a little bland at first…but it came out wonderful..will make again!

I made bar-b-que pork sandwiches for my bridge club luncheon. I had left-over pork tenderloin, but did not like the bottled sauce I bought. I made this sauce instead and it was delicious!
