Ingredients

  1. ½ cup cider vinegar
  2. ½ cup ketchup
  3. ⅓ cup white sugar
  4. 1 (2 ounce) jar pimento peppers, drained and chopped
  5. 1 small green bell pepper, chopped
  6. 1 tablespoon lemon juice
  7. 1 tablespoon chopped onion
  8. 1 teaspoon mustard powder
  9. ½ teaspoon salt
  10. ¾ cup olive oil

Instructions

  1. Blend cider vinegar, catsup, white sugar, pimentos, green bell pepper, lemon juice, onion, mustard, and salt in a blender until smooth. Stream olive oil into the vinegar mixture while blending; blend until the dressing emulsifies.
  2. Pour dressing into a bowl, cover with plastic wrap, and refrigerate until chilled, at least 30 minutes.

This is so good, easy to make, and tastes just like French dressing from the store — with 100% olive oil, instead of the usual (yucky) soybean oil. I didn’t have pimentos or green bell pepper, and I used green onions instead of yellow, and it still tasted just like French dressing. I used garlic salt instead of regular, and added a whole lot of black pepper. I love black pepper in salad dressing. The second time I made this I substituted honey for the sugar, to make it healthy. Still wonderful! Finally, I just dumped the whole mixture into the Vitamix, started it on low, and turned it up to mid-speed. The consistency turned out awesome — without all the fuss.
