This soup has a wonderful flavor and is creamy and thick, with tangy goat cheese to balance out your palate. Although I really prefer the heavy cream, you can substitute chicken or veggie broth if you’d like.

Reviews
My husband’s not a fan of walnuts, so we used sliced almonds instead and added left over roast chicken to make a one-dish dinner. It was quite good, and the blue cheese really gives the something extra – don’t leave it out.
Used arugula and goat cheese crumbles and no oil- dressed with a bit of balsamic and also added a chopped hard boiled egg. Is it the same recipe at all? No- but the beets were already spiraled at the grocery & $3.00 off the usual $3.99 so thought I’d try something new
I have made this twice for my family, and we love it. I used a high quality, syrupy balsamic vinegar, and included some minced garlic in the dressing. A good strong blue cheese works best.
