I defy anyone to realize this contains zucchini, and the only indication that there are maraschino cherries is the red polka dots. This is a particularly delicious recipe for using up those many garden zucchini!

Ingredients
- 2 pounds cranberries
- 2 tablespoons orange zest
- 3 cinnamon sticks
- 1 pint orange juice
- 2 cups packed brown sugar
- 2 cups water
Instructions
- Place the cranberries, grated orange rind, cinnamon, orange juice, brown sugar and enough water to cover cranberries in a saucepan. Bring mixture to a boil over high heat. Immediately turn heat down and simmer for about 1 hour or until the sauce has thickened. Taste for sweetness and adjust with additional sugar if necessary. You can not overcook, so continue cooking until you have a good thick consistency. Let mixture cool a bit then refrigerate in a covered container.

This was a good basic start. I added strawberries and grated orange to the recipe and cooked on high for three hours in the slow cooker stirring once an hour then removed the lid and cooked an additional half hour to reduce. I also cut my sugar by use sugar substitute. You can let cranberries sit in sugar a few hours before cooking also.
This recipe was published again in October/November 2020 Allrecipes magazine. The recipe was modified in half. Superb, I have made various cranberry sauce over the years and I finally found my go to. The brown sugar, cinnamon stick and simmering it for a while gives it a genuine flavor. Everyone love it.
Absolutely love this recipe. Also made it by adding 1 can of pineapple tidbitspacked in 100% juice and that was also awesome!
Amazingly delicious, but don’t “add water to cover the cranberries” – cranberries float! Had to simmer two hours to get it reduced. But it was incredible.
WOW…fantastic cranberry sauce. I followed another reviewers suggestion and reduced it to 24 servings (12 oz bag). Since it’s a 2020 Thanksgiving, only two of us. I used all orange juice instead of water and OJ. Adjusted more brown sugar to taste. It cooked in less than an hour and thickened beautifully without the need for cornstarch. I’m sure the taste will be better after it stays in the fridge till serving it tomorrow. Thank you so much…will share with friends this tasty and easy recipe.

I would reduce the amount of water next time to only 1 cup. I had to cook it way too long to get the right consistency. I had to add corn starch to thicken. 1 Tsp of ground cinnamon was enough since I didn’t have the sticks.
Making it now but in reference to the instructions to “add enough water to just cover the berries”…cranberries float. That’s how they are harvested. The farmers flood the fields. Soooo, one might be adding too much water if trying to cover them. Just say in’. It smells so good.
This is fantastic exactly how written. I get so many compliments and it’s so easy. I simmer it for hours so it gets really thick, but if you’re in a rush you could add cornstarch.
I FOLLOWED THE RECIPE EXACTLY. IT TOOK ABOUT 4 HOURS AT SIMMER TO GET IT THICK AND IT WAS WAY TOO TART. HAD TO ADD MORE SUGAR.

I love cranberry sauce, and this recipe is amazing! I followed the recipe, using about 1 1/2 cups of water to cover the cranberries. After simmering for an hour, the sauce was too runny for my taste, so I kept simmering the sauce for about 2 1/2 hours total. In retrospect, I would reduce the water by 1 cup.This cranberry sauce is unique and a bit sweeter (due to the brown sugar) than a traditional back-of-the-bag cranberry sauce recipe. I like my cranberry sauce tart, but I did not find it too sweet. I would imagine the added sweetness would go over well with most palates. I will definitely make again (and tweak with the amount of liquid added).
Make this every year for Thanksgiving, Love the orange zest! Forgot the cinnamon sticks this year, ground cinnamon worked!
