Slam Dunk Sauce

An excellent and filling oatmeal bread. This tastes best when it is hot and fresh, served straight; but, it also tastes fantastic when paired with a little butter and honey. This recipe is the end product of numerous iterations and trial and error.

Ingredients

  1. 3 tablespoons mustard powder
  2. ¼ cup wasabi powder
  3. 1 teaspoon salt, or to taste
  4. ½ teaspoon cayenne pepper
  5. ½ teaspoon ground black pepper
  6. ¼ cup honey
  7. 1 (12 fluid ounce) can or bottle beer
  8. 3 cups ketchup
  9. ½ cup Worcestershire sauce
  10. 2 tablespoons lemon juice
  11. ½ cup finely chopped onion
  12. ½ cup chopped fresh cilantro

Instructions

  1. In a medium saucepan, combine the mustard powder, wasabi powder, salt, cayenne pepper, ground black pepper, honey and 1/4 cup beer. Mix well, then stir in the ketchup, Worcestershire sauce, lemon juice, onion and cilantro.
  2. Place saucepan on the stovetop and bring to a boil over medium high heat. Reduce heat to low and let simmer for at least 1 to 1 1/2 hours. Pour in beer as needed to keep a consistency slightly thinner than ketchup.

I followed this recipe to the letter with the exception of wasabi powder(couldn’t find it)which we replaced with wasabi horseradish (1 tbsp). We used it with ribs and it was superb. Can’t wait to try it with chicken!!!!

Really GOOD. Left out the cilantro due to allergy. Wonderful flavor.

Superb… but best with an ale preferably a cream ale… no generic beer will do the job as well…
