Sfoof is a somewhat sweet dish from Lebanon. Because it lacks the rose water and orange blossom fragrance prevalent in the majority of Middle Eastern desserts, it is palatable to Americans. Sahteyn (Good food)!

Ingredients

  1. 5 cups turkey stock
  2. 1 cup water
  3. ¼ cup all-purpose flour
  4. 1 teaspoon poultry seasoning
  5. 1 teaspoon salt
  6. ½ teaspoon ground black pepper
  7. ¼ teaspoon celery salt

Instructions

  1. Bring turkey stock to a boil in a medium saucepan.
  2. Whisk water and flour together in a small bowl until smooth; gradually whisk into turkey stock. Season with poultry seasoning, salt, pepper, and celery salt.
  3. Bring to a boil, reduce heat, and simmer until thickened, 8 to 10 minutes.

It was quick and easy but quite bland. Also I had to use double the amount of the flour to get the gravy to thicken. So that’s like gravy at buffet and no wow factor at all. Will try to look for better recipe.

Made it with 1/2 cup of flour and 6 tablespoons of cornstarch after reading some of these comments on here. Came out pretty good!

I’ve made this the last couple of Thanksgivings/Christmases and it’s been a huge hit. I usually have to add a little more flour or even a little cornstarch to get it to thicken up to my tastes (I always like my sauces and gravies to be really thick) but I can’t argue with the amazing flavor.

I was in a pinch for gravy and this did the job. I had to add way more flour to thicken it up, as other reviewers had said. I added a little bit of the turkey drippings and a little bit of potato water as well. Not bad.

This was a nice gravy, after a few adjustments. I used corn starch instead of flour, and increased it to roughly a tablespoon per cup of liquid. I used white wine instead of water, and added a few splashes of Worcestershire sauce (for both flavour and colour). Will definitely use this one again in the future.

Was a hit tonight. Followed the reviews and made it with the roux (butter + flour + broth). Came out great. I strained the broth through a culendar into a measuring cup and then used a turkey Baster to siphon the turkey day off of the top. Used home made poultry seasoning. Everyone loved it.

Such a quick and easy recipe, not to mention really good. I added a tsp of herbes de provence (used it to season my turkey too) and the broth was very savory. I gave this five stars because it was easy (not a fan of poultry seasoning).

I adjusted this recipe a lot bc it’s just my boyfriend and I plus it seemed like it would be too watered down. I melted 2 tbsp of butter and stirred in 2 and a half tbsp of flour. Poured in 1 can of turkey broth ( 2 cups) and a touch of celery seed and pepper. stirring until thick enough.

This recipe does not work. The gravy does not thicken. I think the proportions are wrong; I am not experienced with making gravy but I followed this exactly and was very disappointed with the watery consistency.

This is a tip. Place frozen turkey parts in crock pot. Add chicken broth, ( NO WATER), seasonings of your choice. When meat is done,,remove from pot. Remove meat from bone after cooling. meanwhile,,,,The broth in the pot thicken with a butter and flour roux. Use over baked potatoes, rice, or noodles. Add meat from bone and simmer 20 minutes to add to topping of your choice.
