This cozy, homemade mac and cheese recipe is quick, inexpensive, and unbelievably creamy. Boxed or frozen mac and cheese meals cannot even come close to it! The rich sauce that covers nicely cooked pasta is enhanced by the strong and slightly sour flavor of cheddar and cream cheese. By changing the cheeses or including some cooked vegetables, you can adapt this dish to your preferences. Serve with a green salad as a meatless main course or as a side dish to roasted or grilled meats.

Ingredients

  1. 8 cups diced rhubarb (1-inch pieces)
  2. 1 red onion, cut into 8 equal wedges
  3. 9 cloves garlic
  4. 1 cup beer
  5. 1 cup brown sugar
  6. ½ cup ketchup
  7. ¼ cup balsamic vinegar
  8. 2 tablespoons Worcestershire sauce
  9. 2 tablespoons chili powder
  10. 1 tablespoon liquid smoke
  11. 2 teaspoons salt
  12. 1 teaspoon ground cinnamon
  13. ½ teaspoon cayenne pepper

Instructions

  1. Preheat oven to 450 degrees F (230 degrees C). Spread rhubarb, onion, and garlic on a baking sheet.
  2. Roast in the preheated oven until tender, about 15 minutes.
  3. Transfer roasted rhubarb, onion, and garlic to a blender; puree until very smooth.
  4. Pour rhubarb puree into a large pot. Stir in beer, brown sugar, ketchup, balsamic vinegar, Worcestershire sauce, chili powder, liquid smoke, salt, cinnamon, and cayenne. Simmer over medium heat, stirring occasionally, until sugar dissolves and flavors combine, about 15 minutes.

So good!! Thank you for this recipe! the whole family just kept pouring more sauce onto their pork tenderloin! makes about 3, 500ml jars. it does have more of a thin applesauce consistency but I expected that with the rhubarb. I will be keeping this one for every rhubarb season

Wonderful. I omitted the liquid smoke and used mission fig balsamic vinegar. This is the best sauce. It is even great with cheese and crackers!
