Remade Pickles

These pickles were a family favorite and were made by my grandmother. When she opened them, they were gone in a day, so it’s a shame they have to wait for 2 weeks until they’re ready!

Yield: 1 to 32 ounce jar

Ingredients

  1. 1 (32 ounce) jar Polish dill pickles, cut into thick bite-size pieces
  2. 2 cups white sugar
  3. ½ cup cider vinegar
  4. ¼ cup packed brown sugar
  5. ¼ cup cold water
  6. 1 tablespoon pickling spice

Instructions

  1. Place pickle pieces in original pickle jar.
  2. Stir white sugar, cider vinegar, brown sugar, water, and pickling spice together in a saucepan. Bring to a boil; cook and stir to a syrup-like consistency, about 2 minutes.
  3. Pour hot syrup mixture over pickles into pickle jar. Cool to room temperature before covering; store in the refrigerator for 2 weeks before serving.

I started out with half a batch as written and these were way too sweet for us. When I made the other half of the batch I left out the white sugar altogether and that was perfect for us. If you like really sweet pickles I think you will love this, If not, I recommend cutting back on the sugar. I did love how the tartness still came through from the original pickle.
