Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

Some of the bitterness is mitigated by steaming the kale. All the flavors are brought together by the salad dressing. This dish is healthful since it contains four superfoods: kale, quinoa, avocado, and olive oil.

Ingredients

  1. ⅔ cup quinoa
  2. 1 ⅓ cups water
  3. 1 bunch kale, torn into bite-sized pieces
  4. ½ avocado – peeled, pitted, and diced
  5. ½ cup chopped cucumber
  6. ⅓ cup chopped red bell pepper
  7. 2 tablespoons chopped red onion
  8. 1 tablespoon crumbled feta cheese
  9. ¼ cup olive oil
  10. 2 tablespoons lemon juice
  11. 1 ½ tablespoons Dijon mustard
  12. ¾ teaspoon sea salt
  13. ¼ teaspoon ground black pepper

Instructions

  1. Bring the quinoa and 1 1/3 cup water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Set aside to cool.
  2. Place kale in a steamer basket over 1 inch of boiling water in a saucepan. Cover saucepan with a lid and steam kale until hot, about 45 seconds; transfer to a large plate. Top kale with quinoa, avocado, cucumber, bell pepper, red onion, and feta cheese.
  3. Whisk olive oil, lemon juice, Dijon mustard, sea salt, and black pepper together in a bowl until the oil emulsifies into the dressing; pour over the salad.

Loved this recipe! It was so fresh and light…great dish for summer. I added about 10 cherry tomatoes quartered, some kalmata olives and served with grilled chicken.

I love this salad and so does everyone else who has tasted it. We were going to have friends over and they wanted to delay due to the need to eat healthy. I said I have some delicious healthy recipes. Usually I serve this with salmon steaks but tonight I served it with baked yams. For four of us I doubled the recipe and had a little left over. I also really enjoy a balsamic glaze drizzled over this! It’s delicious on its own but the balsamic glaze kicks it up a notch! In the attached photo, I had not yet added the feta cheese. . . That’s important! 😉

Stephanie you went over and beyond delicious. I’m always trying to find healthy recipes (without sacrificing taste) for my fitness group I teach. This was a hit. Thank you, next time I have to double the recipe. I don’t normally post reviews about many recipes on here although I use All Recipes all the time. This salad though….. wow! Even my hubby who is a self described kale hater loved this salad. Wow! Loaded with flavor! We substituted spinach for the kale, but other than that we stuck with the recipe. At it with Arabic pita and it was a great, healthy and not too heavy dinner!
