Japanese Style Teriyaki Sauce

Uses pineapple peels, apples, and mirin to make teriyaki sauce or marinade in the Japanese style.

Ingredients

  1. 3 cups soy sauce
  2. 1 ½ cups mirin (Japanese sweet wine)
  3. 1 orange, juiced
  4. 6 ounces chopped fresh pineapple with skin
  5. 1 Granny Smith apple, cored and chopped
  6. 2 cloves garlic
  7. 1 teaspoon grated fresh ginger root
  8. 4 tablespoons white sugar, divided

Instructions

  1. In a saucepan, combine soy sauce, mirin, orange juice, pineapple, Granny Smith apple, garlic, ginger, and half of the sugar; bring to a boil. Reduce heat, and simmer 20 minutes. Adjust sweetness to taste with remaining sugar.

I really enjoyed the consistency of the sauce. I added ground peppers to the sauce so it turned out a little spicy but great sauce or marinade.

Just wonderful. This is nice and tangy/sweet. I only needed aboit 2.5 Tbsp of sugar. It thickens upon cooling. Thank you for the recipe.

This is restaurant quality teriyaki sauce. Mirin is not available in my area, so I used 1 1/2 cups Holland House White Cooking White and 6 tsp of sugar as a substitute. Marinate the meat a maximum of 6 hours.

i used all natural sweet soy sauce, which has a consistency similar to oyster sauce, but everything else was the same, came out perfect.

Great recipe! I used it to marinade and cook venison steaks they turned out great. But I recc. low sodium soy sauce because it was a little to salty.
