Japanese-Style Pickled Cucumber (Sunomono)

Ingredients

  1. 1 pound Persian cucumbers, thinly sliced
  2. 1 teaspoon salt
  3. ⅔ cup rice vinegar
  4. ¼ cup white sugar
  5. 1 teaspoon soy sauce
  6. 1 teaspoon sesame oil
  7. 2 tablespoons sesame seeds

Instructions

  1. Place Persian cucumbers in a bowl; add salt and mix well. Let sit until cucumbers release their juices, about 10 minutes. Squeeze excess juice from cucumbers and drain.
  2. Whisk together rice vinegar, white sugar, soy sauce, and sesame oil in a bowl until sugar is dissolved; pour over cucumbers. Marinate for 30 minutes. Garnish with sesame seeds.

I cut the sugar to a tablespoon and added red pepper flakes for some zing. It’s a good low cal snack or side.

8.24.20 … Japanese-Style Pickled Cucumber (Sunomono) by Alex Mei … Slightly sweet, slightly vinegary. Not wowing on its own, but probably a good side to accompany a heavy entree.

Made it exactly as written , came out a bit too sweet compared to the versions I’ve had in restaurants. Maybe a little less sugar or a little more vinegar. 3.5 stars
