When you can’t acquire the real thing, these will work. Cocktail sandwiches feature a creamy, delicious corned beef filling with a pickle on top.

Ingredients

  1. 1 ½ pounds fresh cranberries
  2. 1 ¾ cups white sugar
  3. ½ cup port
  4. 1 pinch salt
  5. 1 cinnamon stick

Instructions

  1. Combine cranberries, sugar, port, and salt in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  2. Release pressure using the natural-release method according to manufacturer’s instructions, 10 to 40 minutes. Unlock and remove lid. Add cinnamon stick and select Saute function; cook until sauce thickens, 5 to 10 minutes. Remove and discard cinnamon stick.
  3. Blend sauce with an immersion blender for a smoother consistency. Let cool; sauce will continue to thicken naturally.

Awesome sauce! I was able to change the serving size from 1lb. of cranberries to a 12oz bag I bought at the store. The other ingredients adjusted automatically and, voila! I made it all according to the directions and I’m so very pleased with the results. The 12oz bag yielded two 4oz Ball jars of very beautiful cranberry sauce. I can’t wait to put it on the table Thanksgiving day!

It is yummy. But why would you make it in and instant pot, formerly known as a pressure cooker? In a large kettle you get to enjoy the aroma as it simmers and thickens!
