Ingredients
- ½ pound ground beef
- ½ cup panko bread crumbs
- ¼ cup 1% milk
- 2 ounces shredded sharp Cheddar cheese
- 1 small egg
- ½ (1 ounce) package dry onion soup mix (such as Lipton®)
- 2 tablespoons barbecue sauce
Instructions
- Combine ground beef, bread crumbs, milk, Cheddar cheese, egg, and dry onion soup mix in a bowl; mix until well combined. Transfer mixture to a cutting board and shape into a loaf.
- Place a trivet into a multi-functional pressure cooker (such as Instant Pot®). Pour 1/2 cup water into the pot and set loaf on top of the trivet. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid.
- Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler.
- Carefully transfer the trivet to a rimmed baking sheet. Brush meatloaf with barbecue sauce. Broil for 3 to 4 minutes. Allow to rest for 5 minutes before slicing.

My Husband who does not like meat loaf, loved this. I added butter crackers instead of panko and used mozzarellas cheese. There wasn’t any left for left overs. Thank you, will definitely do this one again.

I made exactly as written, last week, for the first time. It was fantastic. I am making it again tonight- We are changing one item, because our family likes only ketchup as the top, not the BBQ Sauce…other than that, this was great!!
Turned out great ! Used townhouse butter crackers instead of Panko (was out) the texture was very good and moist!

This is a really good meatloaf recipe. It’s easy to make. I used a pound of hamburger for one loaf but kept all the other ingredients the same. It takes a few extra minutes in the instant pot. This will definitely get added to the meal rotation.
