When I visit, my father prepares this as a special treat. I love eating it forever. A frigid winter day is the perfect opportunity to warm up (and fill up). Oyster crackers are a must-have!

Ingredients

  1. ½ cup mayonnaise
  2. ¼ cup extra virgin olive oil
  3. 3 tablespoons grated Parmesan cheese
  4. 2 tablespoons blue cheese salad dressing
  5. 1 tablespoon red wine vinegar
  6. 3 cloves garlic, minced
  7. 1 teaspoon lemon juice
  8. ½ teaspoon dry mustard
  9. 4 dashes Worcestershire sauce
  10. 2 dashes hot pepper sauce (such as Tabasco®)
  11. 1 pinch cayenne pepper
  12. salt and pepper to taste
  13. ¼ teaspoon anchovy paste

Instructions

  1. Beat together mayonnaise, olive oil, Parmesan cheese, blue cheese dressing, vinegar, garlic, lemon juice, dry mustard, Worcestershire sauce, hot pepper sauce, cayenne pepper, salt, and pepper, and anchovy paste in a bowl until well blended.
  2. Cover and refrigerate for 4 hours before serving.

I made this once to bring to a party and ever since, I haven’t bought salad dressing because this is so easy and so good. It’s kind of a cross between Caesar, blue cheese and creamy garlic. I make it exactly as written, and serve with mixed spring greens, thinly sliced red onion, shaved Parmesan, and other salad veggies. Perfection!

This is a very good caesar dressing recipe. When I started making it, I did not realize I did not have anchovies but when I was done, I did not notice the lack of them. I will make it with anchovies next time and compare.

Okay, so I hate it when people change everything about a recipe and then rate it. That being said, I had a lime instead of a lemon and I had no blue cheese anything so didn’t include that or the anchovies. It was still delicious so I’m going to go out on a limb here and say that this recipe, as written, would also be delicious.

All the rave reviews are correct. This is a fantastic dressing recipe. I needed a last minute Caesar dressing on Thanksgiving, and proceeded to make this dressing with mostly the designated ingredients. My skeptical daughter-in-law looked on as I optimistically mixed everything up. I said the reviews looked good, and you win some and you lose some. … and this is a winner! She asked to keep the leftovers, and wanted the recipe.

I have been making this every week for months (years maybe). Caesar salad is my family’s fav and this dressing rocks. I do add the anchovy paste. The only change is that I just add 2T blue cheese crumbles in place of the dressing. So so good. Thanks for the recipe!!
