This is just as simple as shopping at a store and is healthier and more tasty. My four-year-old son adores this!

Ingredients

  1. 1 egg yolk (Optional)
  2. 1 cup fat-free mayonnaise
  3. 2 tablespoons diced cucumber
  4. ½ lemon, juiced
  5. 1 tablespoon diced onion
  6. 1 ½ teaspoons white vinegar
  7. 1 teaspoon mustard
  8. 1 small garlic clove, pressed

Instructions

  1. Beat egg yolk and mayonnaise together in a bowl; stir cucumber, lemon juice, onion, vinegar, mustard, and garlic into the mayonnaise mixture.
  2. Cover bowl with plastic wrap and refrigerate at least 1 hour.

I did skip the egg and didn’t miss it, and I used “light/reduced fat” mayonnaise instead of “fat free.” I like the little crunch you get from the cucumber and that little zing from the fresh lemon juice. This is a good option for traditional fat-laden tartar sauce, and I’d make again.
