Excellent way to use fresh watermelon. It tastes great with meat or on sandwiches.

Ingredients

  1. 2 (12 ounce) packages fresh cranberries
  2. 2 ½ cups white sugar
  3. 1 large orange, zested and juiced
  4. 1 tablespoon minced fresh ginger root

Instructions

  1. Combine cranberries, sugar, orange zest and juice in a large pot and heat over medium heat. Cook and stir occasionally until berries pop, about 20 minutes. Let cool until thickened.

I used cranberries that I had previously flash frozen. I think the amount of ginger used in this recipe is perfect. I will be making this again. Thanks for the recipe.
