Fresh Strawberry Chia Jam

Another of my mother’s older recipes is this one.

Yield: 2 cups

Ingredients

  1. 14 ounces sliced fresh strawberries
  2. ⅓ cup agave nectar
  3. ¼ cup chia seeds
  4. 2 teaspoons lime juice
  5. 2 tablespoons chia seeds

Instructions

  1. Place strawberries, agave, 1/4 cup chia seeds, and lime juice in a large bowl. Blend with an immersion blender until strawberries are chunky. Add remaining 2 tablespoons chia seeds and mix well with a wooden spoon.
  2. Pour the mixture into two 1/2-pint canning jars. Allow to set in the refrigerator or freezer for at least 8 hours before consuming.
