This vibrant pink applesauce is colorful enough for holidays and easy enough for a weeknight dinner. It looks fantastic at a Christmas dinner and is a favorite among my family and friends. Splenda® can be used in place of sugar.

Ingredients
- 2 pounds apples – peeled, cored, and cut into 1-inch chunks
- 1 cup fresh cranberries
- ¼ cup white sugar
- 3 tablespoons water
- ½ teaspoon ground cinnamon
- 1 pinch salt
- 1 ½ teaspoons lemon juice
Instructions
- Stir apples, cranberries, sugar, water, cinnamon, and salt together in a saucepan. Bring to a boil, reduce heat to low, and cook until apples and cranberries are tender, about 20 minutes. Remove from heat.
- Stir lemon juice into cranberry mixture.
- Mash cranberry mixture with a wooden spoon or fork to make a chunky sauce.

I made this and it is delicious. I did add a bit of ground ginger. I added more apples 3 lbs so I did not have to add that much sugar.

Served this at Thanksgiving and everyone loved it. I sprinkled walnuts on top for “presentation”. Ate it with breakfast the next day. Definitely making it again soon.
This was an excellent accompaniment to baked chicken! I did alter the recipe by adding a teaspoon of ginger and halving the cinnamon to suit my family’s palate. I will be making this again!
My daughter and I enjoyed this, my husband and son not so much.
