Ingredients
- 1 tablespoon vegetable oil
- 1 (3 pound) chicken, cut into pieces
- ½ teaspoon paprika
- ½ teaspoon ground cloves
- ½ teaspoon ground cinnamon
- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper
- 1 bay leaf
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes
- 1 cup chicken broth
- 2 teaspoons brown sugar
- ¼ cup semisweet chocolate chips
- ¼ cup raisins
- 2 tablespoons sesame seeds
Instructions
- Heat vegetable oil in a Dutch oven or large pot over medium-high heat. Add chicken pieces and cook until golden brown on all sides, about 10 minutes. Remove from the pan and set aside. Reduce heat to medium; stir in paprika, cloves, cinnamon, black pepper, cayenne pepper, and bay leaf until fragrant, about 30 seconds. Add onion and garlic; cook and stir until onion has softened and turned translucent, about 5 minutes.
- Stir in tomatoes, chicken broth, and brown sugar; bring to a simmer over medium-high heat. Once simmering, stir in chocolate chips until melted, then return chicken pieces to the pot. Reduce heat to medium-low, cover, and simmer until chicken is tender and no longer pink at the bone, 15 to 20 minutes. Stir in raisins and cook 3 minutes longer. Sprinkle with sesame seeds to serve.

Judging from the photo I thought the sauce would be thicker…it was rather runny.. It tasted absolutely fantastic and not sure what I’d do the change it.. I served it on a bed of rice which seemed the only logical choice to maintain the taste and absorb the liquid.. Still very fun to make!!!
You should do everything but rather than adding the chicken back. Blend the sauce in a blender. Put it in a pot and cook the chick men the rest of the way!!

The flavor in this dish is absolutely perfect. It truly has some of everything: it’s at once sweet, slightly smoky, and spicy. I used about 1.5 lbs of boneless chicken thighs, and added some white rice to pair with the additional sauce. I also omitted the sesame seeds. The recipe doesn’t say to remove the chicken juices from the pan after they’re initially cooked, but I did remove all but about 2 tbps, which ensured that the spice mixture didn’t stick. Had I not taken this step, the sauce would’ve been way too watery. Before re-adding the chicken, I simmered for an additional 15 minutes, which really enabled the sauce to thicken. I didn’t have a lid large enough to cover my skillet, so I just allowed the final mixture to simmer without covering. Turned out great!
Could use more salt and less clove.
We used deboned chicken thighs. Excellent results, but would use unsweetened chocolate next time, rather than the chocolate chips.
very good flavors! I didn’t put in the brown sugar as someone posted. It would have been way too sweet. I pureed the sauce so that it wasn’t chunky and it was more like the mole sauce that I know. I would used 1/2 the amount of cloves and I did add more cayanne pepper, for the sweet and spicy.
Absolutely, I would definitely make this again!!!! I may even try it with a little more heat, as a few of my family members like spicy foods! I had an incredible Mole at a local restaurant one time, and have been looking for a recipe to match it…. This is as close as I have found. Loved it!
Very good. I accidentally put too much pepper in but it still turned out awesome.
I made this with all ingredients listed. I did add 2 tablespoons of peanut butter and I love garlic so I added more minced garlic and more comino. I also added a teaspoon more of cayenne pepper. I puréed the sauce after I let it cool down that way you don’t have chunks of tomato in the sauce. Love combination of flavors. I have made this for many potlucks and have had request from friends to make this. By the way I don’t eat this the same day I cook it I cool in the fridge and the next day put in a crockpot and taste so much better the next day.

The first time I make a recipe, I stick to it closely so the only change I made was adding a few more chocolate chips. This recipe is easy and yields a lot of bang for your buck. Feel free to add more cayenne if you like heat but if you make it as written, you won’t be disappointed. Delicious!
Loved this recipe. We like food on the spicier side, so made some adjustments to make it spicier. Also followed the recommendations in the reviews to bake in the dutch oven versus cook on the stove. After the sauce was prepared, I put in the oven at 350 for about 2 hours (added a little extra chicken stock) and the meat came out deliciously soft and well flavored. Super easy and quick recipe, will be a go to recipe.
Made this tonight with no major changes, just added bell pepper to use some up. Followed another reviewer’s advice by using the slow cooker. Love it! I didn’t really know what to expect, but a new favorite, I think!
I followed this recipe to the letter. It is a winner! It has the perfect blend of spices that will surprise and please even the harshest critic. I was skeptical about the 3-layers of sweet: the brown sugar, chocolate, and raisins, but combined they only enhance the melding of flavors. I served it with brown rice and homemade refried beans. The meal was intended for expected guests the following day. It didn’t last that long, which creates a dilemma. What in the world will I served tomorrow??? This chicken mole is better than any I’ve had in even my favorite authentic Mexican restaurant.

First time I ever made a mole and it turned out GREAT! Changes: Cut up chicken tenders so cooked pretty quickly. Didn’t have any bay leaves so I completely omitted that. Didn’t have sesame seeds so I used sesame oil to Brown my chicken.
I omitted the raisins and sesame seeds and added 1 tablespoon of peanut butter and 1 chopped jalapeno. Excellent!
