Chef John’s Tzatziki Sauce

Making a delicious corn soufflé from home is simple. For our Thanksgiving dinner, I always make it. They all adore it!

Ingredients

  1. 1 large English cucumber, peeled and grated
  2. ½ teaspoon salt
  3. 2 cups Greek yogurt
  4. 4 cloves garlic, minced
  5. 1 pinch cayenne pepper, or to taste
  6. ½ lemon, juiced
  7. 2 tablespoons chopped fresh dill
  8. 1 tablespoon chopped fresh mint
  9. salt and ground black pepper to taste
  10. 1 sprig fresh dill for garnish
  11. 1 pinch cayenne pepper for garnish

Instructions

  1. Sprinkle grated cucumber with 1/2 teaspoon salt in a bowl and let stand 10 to 15 minutes to draw out juice.
  2. Place yogurt into a separate bowl. Dump cucumber and its juice onto a sturdy, dry paper or cloth towel and squeeze as much moisture as possible from the cucumber. Mix cucumber into yogurt. Add garlic, cayenne pepper, and lemon juice; mix thoroughly.
  3. Stir dill and mint into yogurt-cucumber mixture; season with salt and black pepper. Adjust all seasonings to taste.
  4. Cover bowl with plastic wrap and refrigerate for 3 or 4 hours (or overnight). Transfer to a serving bowl and garnish with a sprig of dill and a sprinkle of cayenne pepper for color.

The only change I made was adding a second English cucumber. I adjusted the spices accordingly. Super terrific.

I’ve made this a dozen times . It’s incredibly delicious. Overnight is best I think if you can plan ahead . I go overboard on garlic with nine cloves . I add more yogurt and teaspoon of honey . If I have them I’ll do dill and mint, finely chopped Enjoy …..thank you Chef John .

Absolutely delicious and simple. However, you just need to stress the importance of quality ingredients. Mild garlic, whole milk yogurt, etc. All recipes benefit from the best quality ingredients. Due to its simplicity, this one absolutely hinges upon it.

The recipe is easy to make. However, the Greek yogurt and lemon juice ( used only a tbsp. of lemon juice,) left it very sour. I also found it had a chalky texture due to the yogurt. I thought maybe it was the fact that I bought fat free, so I added a little olive oil. Mine needed more salt, and about a teaspoon of sugar before it was edible.

I use cilantro instead of Dill because that’s what I had and it was excellent! Also I didn’t use that much garlic and I diced the cucumber instead of grating. And added Diced onion. *Made several times it’s so good. Going to try dried herbs instead of fresh this time ** Thanks so much for sharing

This is so addictive! I actually used a food processor to grate the cucumber, and used dill spice as well. After tasting, I added about 1 1/4 tsps of salt and decided to exclude the mint. I will be serving this with some spanakopita, greek salad, and more for Easter!

I have never hade this before so not sure what is supposed to taste like. I served on Feta Spinach Burgers. Did not care for it too much. Garlic was way too overpowering.

I’ve made this recipe twice. It is excellent. The most recent time I’ve made a few small modifications. I added some EV Olive oil. I see a number of Tzatziki recipes call for it and I used half the garlic. I believe it was a small improvement. The amount of garlic is a personal choice and can vary to taste, or so I believe

This was really good, but after making it a couple of times, I can say you MUST get the expensive Greek yogurt for the sauce to be its best. Definitely refrigerate overnight!

This is better than the 4 Greek restaurants around me (in NJ). I omit the mint. I always have. I appreciate the taste of the cucumber and the dill and I feel like the mint overpowers everything else. I made it for a party (what the recipe calculated as 72 servings). 3 containers of Greek yogurt, 2 heads of garlic, 1 cup of fresh dill and only 1 1/2 lemons. It was amazing.

This recipe is spot on for us. I always enjoy watching Chef John’s videos. They are helpful and entertaining! He has such a pleasant and humorous manner and personality.

Chef John, loved the taste & creaminess. Shredding the cucumbers was a much better consistency & I think the recipe needs to state “Drain the yogurt”. I knew to do that because even the best greek yogurt where I live still needs draining or it won’t be creamy, it will be runny! As always you never disappoint!
