Ingredients
- 40 small pickling cucumbers
- 7 cups water
- 1 ¾ cups white vinegar
- 1 ¼ cups white sugar
- 1 teaspoon whole pickling spices
- 15 sprigs dill, or as needed
- 5 tablespoons pickling salt
- 10 cloves garlic, peeled
- 10 (1/4 inch x 3 inch) strips peeled fresh horseradish root
Instructions
- Soak cucumbers in ice-cold water, 2 to 3 hours. Drain and set aside.
- Sterilize five 1-quart jars with the lids and rings in simmering water in a large pot until brine is ready.
- Combine 7 cups water, vinegar, sugar, and pickling spices in a second large pot. Bring brine to a boil, stirring occasionally to dissolve sugar.
- Place into each sterilized jar: a few dill sprigs, 1 tablespoon pickling salt, 2 garlic cloves, and 2 horseradish strips.
- Trim ends from cucumbers and cut a slit in the skin of each one so brine can soak in and any air can get out. Pack cucumbers into the prepared jars. Pour boiling brine over cucumbers in the jars, filling to within 1/2 inch of the top. Top with the lids and screw the rings on tightly.
- Bring water in the pot used to sterilize the jars to a boil. Place the jars into boiling water and turn off heat; allow the jars to sit until water is cool. Press the center of each lid with a finger to ensure the lid does not move up or down. Refrigerate any unsealed jars.

How long before I can try the pickles? I just made a batch and they smell incredible!
Just opened the jar we made a few weeks ago! Amazing! One of the best pickles ever! I really really love dill pickles and this is a top Notch good one! Try it! If you don’t like it you can mail me all of your jars!! 🙂
I made these using prepared horseradish because I couldn’t find horseradish root at the grocery. I also just used half cup sugar, and added 1 halved jalapeno to each jar. The mixture looks weird- milky white due to the prepared horseradish (2 T. per jar), but the pickles are fantastic! love these!
Great, simple receipe! I doubled the garlic and did not use sugar. Turned out awesome!
I only made a small batch as it is a new flavor for us. I also omitted the sugar because we do not care for sweet pickles. I used purchased horseradish as I could not find fresh at my local store. I made sure to cut the blossom end off the cucumbers (keeps them crisper) and added a pinch of red pepper. These were fantastic! Tasty without clearing out your sinuses! LOL. My family loved them and I will make again.

These were a real crowd pleaser at our house! I am diabetic, so I cut the sugar back to only 1/4 cup, and we don’t really like our pickles sweet. Other than that I followed the recipe completely and everyone loved them! The horseradish adds a nice taste to the pickles….definately a keeper!
These pickles are really good!! 2 of my SIL’s say these are their favorite pickles, hands down. I love my dill pickles, but these are a nice change to have in thre frig. Be bold-give them a try!!!
These pickles are addictive and incredible! This was my first attempt at making pickles and they turned out beautifully. My family has already devoured 2 jars and I made them last Thursday!
