With Parmesan cheese, Italian-style bread crumbs, and marinara sauce for Italian flair, this simple bison meatloaf will satisfy the whole family.

Ingredients

  1. 1 cup ketchup
  2. 6 fluid ounces tomato-vegetable juice cocktail (such as V8®), or more to taste
  3. ¾ cup molasses
  4. 2 tablespoons Meyer lemon juice
  5. 1 tablespoon Worcestershire sauce
  6. 1 tablespoon brown sugar
  7. 1 tablespoon minced fresh onion
  8. 1 tablespoon minced garlic
  9. 2 teaspoons ground black pepper

Instructions

  1. Stir ketchup, tomato-vegetable juice cocktail, molasses, Meyer lemon juice, Worcestershire sauce, brown sugar, onion, garlic, and black pepper together in a bowl.
  2. Cover bowl with plastic wrap and refrigerate to let the flavors blend, at least 45 minutes.

Little spicey so you might want to cut down on the black pepper a bit. I used 1 cup molasses and 2 TBS brown sugar and it’s excellent!!! Will definitely make again 🙂

This was delicious on ribs! I think next time I would let this simmer on the stove to thicken a bit instead of just marinating in the fridge. It’s ok as the flavors were there, just a bit thin for my liking.
