Sunny’s Easy Sambal and Mayo Dressing

Ingredients

  1. 1 1/2 cups mayonnaise
  2. 1/2 cup sambal
  3. 1/2 cup finely chopped cilantro leaves
  4. 1 tablespoon creamed honey
  5. 2 teaspoons fresh lime juice, optional
  6. Kosher salt and freshly ground black pepper

Instructions

  1. Stir together the mayonnaise, sambal, cilantro, honey and lime juice in a medium bowl. Taste and season with a pinch of salt and a few grinds of black pepper. Refrigerate for 1 hour before using.
  2. Try over roasted or boiled corn, on or off the cob. Also great as a salad with corn, black beans, chopped hearts of romaine and shredded rotisserie chicken. Or a cold pasta salad with pasta, shredded chicken and chopped celery and scallions.

Just a note about corn holders… they are made to withstand heat. You’re supposed to put them on cold uncooked corn and cook the corn with them!
