Ingredients

  1. 3 quarts canned whole peeled tomatoes
  2. 1 cup extra-virgin olive oil
  3. 1/2 cup fresh basil, chiffonade
  4. 1/2 cup small diced carrot
  5. 1 tablespoon fresh oregano, chopped
  6. 1 small yellow onion, diced
  7. 5 cloves garlic, chopped
  8. 2 cups canned diced tomatoes
  9. 1/2 cup tomato paste
  10. 3 tablespoons kosher salt
  11. 1 tablespoon freshly ground black pepper

Instructions

  1. Combine the whole peeled tomatoes, extra-virgin olive oil, basil, carrot, oregano, onion and garlic in a large saucepan and pulse with an immersion blender. Bring the sauce to a simmer and stir in the diced tomatoes, tomato paste, salt and pepper. Simmer until the carrots are tender, 20 to 30 minutes.

Grand Slam!!!!! I had to cook pasta sauce for 65 people. This was easy, quick, and most importantly, DELICIOUS!!! Don’t get scared about it making 1 gallon of sauce. Freeze what you don’t use. It’s the sauce that keeps on giving

   We have made this Pasta Sauce several times. We use 11 fresh tomatoes, all fresh herbs and even added a little fresh Rosemary. A little Rosemary goes a long way. We put the tomatoes into a pressure cooker for 3 minutes, to make peeling the skins off of the tomatoes easier. We added this to our home made ravioli. We put fresh spinach and cream cheese into some of the home made ravioli, others had fresh spinach, cream cheese and sweet Italian sausage and then another ravioli dish had fresh spinach with blue cheese in them.  This Pasta sauce also went well with elbow macaroni!  This Pasta Sauce can really go well with just about any Italian Dish, including using it when making lasagna!

This is my new sauce. It’s so flavorful and easy to make. I make the full recipe and freeze half. As a wanna-be vegetarian, I enjoy the sauce by itself and add meatballs for my husband.
