Grilled Moroccan Spiced Pork Tenderloin with Creamy Harissa Sauce

Ingredients

  1. 1 teaspoon ground cinnamon
  2. 1 teaspoon ground coriander
  3. 1 teaspoon ground cumin
  4. 1 teaspoon paprika
  5. 1 teaspoon kosher salt
  6. 2 tablespoons olive oil
  7. Two 1-pound pork tenderloins
  8. Creamy Harissa Sauce, recipe follows
  9. 1 cup Greek yogurt (8 ounces)
  10. 1 tablespoon fresh lemon juice
  11. 1 tablespoon extra-virgin olive oil
  12. 1 teaspoon harissa sauce *
  13. 1 clove garlic, minced
  14. Kosher salt and cracked black pepper

Instructions

  1. In a small bowl, combine the cinnamon, coriander, cumin, paprika, salt and olive oil. Rub the mixture evenly over the pork tenderloins. Cover and refrigerate for at least 30 minutes or up to overnight. 
  2. Prepare a grill for high heat cooking. Place the tenderloins on the grill and cook until browned and nicely marked, 8 to 10 minutes. Turn the tenderloins and cook until a meat thermometer inserted into the center of each registers between 155 degrees F and 165 degrees F, 8 to 10 minutes longer. Transfer the tenderloins to a cutting board, tent with foil and let rest for 10 minutes. Slice and serve hot or at room temperature with Creamy Harissa Sauce.
  3. In a small bowl, whisk together the yogurt, lemon juice, oil, harissa and garlic until combined. Season with salt and pepper.

This was incredibly delicious! I found it to be perfect as is, but I can’t handle a lot of heat. I did not have pork tenderloin, so used Turkey Cutlets, and they turned out so tender. I can’t wait until the grocery stores have pork tenderloin again so I can try it with pork. The spices used in the marinade made a flavor bomb that smelled intensely delicious as it was grilling and the greek yogurt sauce set it of to perfection. I served it with a Mediterranean Cauliflower Rice that set it off to perfection.

One of my favorite restaurants serves lamb with a harissa based sauce that is out of this world. So when searching for similar recipes, I came across this one. I started with the yogurt sauce to allow the flavors time to marry. I found one teaspoon of harissa to possibly be a misprint, it is not enough flavor. In fact, rather bland and too much of a yogurt taste. I ended up adjusting to taste, cooking twice the amount of garlic in the microwave for 20 seconds, covered in the olive oil to remove the garlicky ‘bite’’, twice the amount of lemon juice and three good Tablespoons of harissa, not the recommended one teaspoon. This was at all too spicy and now tastes like a harissa based sauce should with a good bold flavor. Serving this pork tenderloin dish with grilled zucchini and sweet onions for an easy and healthy weeknight meal. I couldn’t stop tasting this sauce, it’s addicting. Will use it to dip raw veggies in for football games. I’m giving this 5 starts as a Thank you for the recipe, it served as a good guideline to start with and adjust to your own palate!
