Faux Peanut Sauce

Ingredients

  1. 1/4 cup chicken broth
  2. 3 ounces unsweetened coconut milk
  3. 1 ounce freshly squeezed lime juice
  4. 1 ounce soy sauce
  5. 1 tablespoon red miso paste
  6. 1 tablespoon fish sauce or 2 to 3 anchovies, ground
  7. 1 tablespoon hot sauce
  8. 2 tablespoons chopped garlic
  9. 1 tablespoon chopped fresh ginger
  10. 3/4 cup cashew nut butter
  11. 3/4 cup tahini
  12. 1/4 cup chopped cilantro leaves

Instructions

  1. In a food processor, puree the chicken broth, coconut milk, lime juice, soy sauce, miso, fish sauce, hot sauce, chopped garlic, and ginger. Add the cashew nut butter and tahini and pulse to combine. Fold in the cilantro and keep refrigerated until ready to serve. Serve with satay or coconut shrimp.

This is great, my son has a severe peanut allergy but not tree nuts. Thank you Alton for creating this.. We eat satay all the time and now enjoy something other than plum sauce with it.

Joan… I know some people with peanut allergies also have tree nut allergies, but peanuts are a legume and grow in the ground, not on a tree. Thanks for the suggestion!

Shame on you using a tree nut like cashew butter in a recipe for those with peanut allergy. Most likely if you have reaction to peanuts also has allergy to all tree nuts! Dangerous eating.

Try using “SunButter” as a sub in this dish, It is made from sunflower seeds. It can be tolerated for folks with peanut/tree nut allergy. Made in Nebraska I believe. Most grocery store carey in and also Target.

Great sauce! I whipped this up and we had it with chicken satay, two nights in a row…. then we were putting it on toast! Next I think I am going to put it in a rolled turkey breast for that extra flavor kick.
