You make this too difficult. Cook the sauce in a frying pan. When boiling, lower heat to medium, Break the eggs directly in the sauce. They will poach themselves in the sauce. Easy. One pan meal.
My Mom used to make this all the time and it is delicious and healthy. Another variation is to scramble the eggs in the sauce, also delicious. I think these are recipes Italians created during the war to save money.
This sounds great, but it says it serves 4…half an egg and a 1/4 cup of sauce?

When i was little my mom had a similar recipe. She would slice a couple of tomatoes and cook them in a pan, adding some viennas and lastly the eggs. We called it “n mengelmoes”

This is right up my alley! I had left over marinara sauce and I had the eggs and I used locatelli cheese. FAB!! Quck easy
A new favorite. I use sweet soppressata and sub poblano for the Italian frying pepper.
This was a great way to clean out my fridge in a way. I’ve never tried this before but I had tomato sauce left over previously and I had eggs. I cooked them and then put them on toast. On the toast I put butter and garlic power. I topped it with parmesan cheese. Not bad!
This is so delicious! My dad fixed this a lot when we were growing up. He also added chopped mushrooms, a little onion, garlic and sometimes green pepper. My husband actually loves this dish for breakfast.
