Yield: 6 cups

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 1/2 onion, grated
  3. 3 to 4 cloves garlic, minced
  4. Kosher salt
  5. 1 pound ground beef
  6. One 28-ounce can crushed tomatoes
  7. One 6-ounce can tomato paste
  8. Leaves from 2 sprigs fresh basil, cut into thin ribbons
  9. Leaves from 1 sprig fresh oregano, minced
  10. Crushed red pepper flakes, optional

Instructions

  1. Heat the oil in a medium saucepan over medium-high heat. Add the onions and garlic, season with a pinch of salt and cook, stirring occasionally, until the onions are translucent and beginning to brown, 2 to 3 minutes.
  2. Add the ground beef, season with another pinch of salt and pepper flakes (if using) and cook, stirring and breaking up the beef with a wooden spoon, until cooked through, about 5 minutes. Stir in the crushed tomatoes and tomato paste, season with salt and bring to a boil. Lower the heat to a simmer and cook, stirring occasionally, until the sauce is slightly reduced, 15 to 20 minutes.
  3. Add the basil and oregano and simmer a few minutes more to infuse their flavor. Taste and adjust the seasoning. Serve with fresh pappardelle or your favorite pasta.

I made this to use in a lasagna. The flavor was great and it was easy to make. I doubled the recipe and froze the leftovers.

Simple, tasty, perfect balance. Had to add more salt then expected but pleased no sugar was needed.

My 8 yr old made this after watching Duff’s Happy Bake Fun Time. It came out great. Definitely a keeper.
