Ingredients
- 2 (6-ounce) pieces center-cut salmon fillet with skin, about1-inch thick
- Kosher salt and freshly cracked black pepper
- 3 tablespoons unsalted butter, softened and divided
- 1 teaspoon finely grated lemon zest
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 tablespoon whole tarragon leaves
Instructions
- Sprinkle the salmon with salt and pepper. Place skin side up and rub 1 1/2 tablespoons softened butter all over the skin of the salmon. Transfer the salmon, buttered side up, to a sheet pan. Chill in the fridge to firm the butter, about 20 minutes.
- Preheat the broiler to high.
- Place the salmon about 5 inches from the heat source and cook until the skin is crispy and the fish is cooked through, 7 to 8 minutes.
- In a small saucepan over moderate heat, whisk together the remaining 1 1/2 tablespoons butter, lemon zest, lemon juice, mustard and tarragon leaves. Divide the sauce between 2 plates and place 1 piece of salmon on top of each pool of sauce.

I was disappointed in this. I love crispy skin on salmon. Technique didn’t work out. Im not sure if it was my oven, but the skin was burning before the salmon got cooked.

Loved loved this recipe. I was craving crispy fish skin.
My butter wasn’t soft enough so I put butter pats on the salmon ridge and it melted down both sides. Broiled on low for 5 and then turned the broiler off. Left it inside the oven to finish cooking because the thickest part of the fish was 1 inch.
My sauce broke because I was multitasking but it was still tasty. I used dried tarragon and Dijon mustard.
This salmon has been in my rotation since 2011. My kids both asked for it when they went off to college. Has become the way I cook salmon even if I’m using in another recipe, salad, or stir fry. Super easy! I can’t even count the number of times I’ve gotten rave reviews.

Quick and easy recipe for perfect crispy skin salmon. I didn’t have tarragon so I substituted 2 tablespoons of chopped ginger & 2 green onions chopped on the bias. I also omitted the Dijon mustard. Served with a side of jasmine rice and it was delicious.
