Tomato, Mozzarella and Pesto Sandwiches

Ingredients

  1. 1/2 cup prepared pesto
  2. 4 ciabatta rolls, sliced in half
  3. 4 ounces fresh mozzarella, thickly sliced (4 slices)
  4. 1 large tomato, thickly sliced (4 slices)

Instructions

  1. Spread some pesto on the cut side of both halves of each ciabatta roll. Lay a thick slice of mozzarella on the bottom halves, followed by a thick slice of tomato. Top with the other ciabatta halves and serve immediately!

We toasted the bread with olive oil and butter, then added the sauce, tomato and mozzarella and broiled for a few minutes! It was absolutely delicious!

I personally am not a big fan of mutzerell so I used chedder that I like a lot more and added some corn salsa and it was such a refreshing dinner also tried it on a different bun when I ran out and it’s great so unique to everyone’s tastes.
