Ingredients
- 8 to 10 ounces beer
- 1 teaspoon Chicken Seasoning Blend, recipe follows
- 1 teaspoon chipotle steak seasoning
- 2 cups shredded melting cheese blend
- 2 tablespoons olive oil
- 1 white onion, chopped
- 1 1/2 pounds shaved chicken breast
- 1 to 2 teaspoons Chicken Seasoning Blend
- 1/4 cup chicken stock, beer or water
- 4 hoagie rolls, split
- Mayonnaise
- Cherry pepper relish
- 2 teaspoons chicken seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon garlic salt
- Freshly ground black pepper
Instructions
- For the cheese sauce: Combine 8 ounces of the beer, the Chicken Seasoning Blend and the chipotle steak seasoning in a saucepan over medium heat and bring to a simmer. Gradually whisk in the cheese; cook just until the cheese is melted, adding more beer if the sauce is too thick. Keep warm.
- For the chicken: Heat a cast-iron griddle over medium-high heat. Add 1 tablespoon of the olive oil and the onions and cook for 3 to 5 minutes. Add the chicken, drizzle with the remaining tablespoon olive oil and sprinkle with the Chicken Seasoning Blend. Cook until the chicken is browned, 5 to 8 minutes. Pour the chicken stock over the chicken and cook for another minute.
- To build sandwiches: Coat the bottom half of each hoagie roll with mayonnaise. Divide the chicken and onions among the rolls. Drizzle with cheese sauce and top with a bit of relish.
- In a small bowl combine the chicken seasoning, kosher salt, garlic salt and a few grinds of black pepper.

Delicious! Regarding the cheese sauce: used a bit less than 2 cups and added gradually for a more liquid like consistency; heat was just under medium to control the melting process-not clumpy (slowly add more cheese if you want it thicker). Couldn’t find cherry pepper relish. Added shredded lettuce. Will definitely make again. Made with plant-based “chicken” strips and regular chicken (separately).
Cheese sauce clumped up immediately. Made it a second time and added flour and that seemed to fix it a little bit but still very thick.
Giving this 4 stars even though I had the same issue as previous reviewers with the cheese congealing into a rubbery ball. I should have read the reviews and done a little research before diving in. I will make this again as the seasoned chicken and the beer cheese did taste yummy. Next time, I’ll toss the shredded cheese with a bit of cornstarch and whisk handfuls into the beer slowly, just as it starts to steam (short of simmering) – post-research on beer-cheese fondues seem to indicate these steps as the secrets of success. I had the butcher shave chicken breast for me and used an Italian cheese mix. A tasty sandwich that is definitely worth another try.

The cheese sauce was tricky since it has a tendency to get thick and gloopy when left to sit. Best to make the sauce and use immediately. Flavor of everything was on point and would definitely make this again!

I had the gloopy cheese issue. I cook a lot and followed the cheese sauce directions as they were written. VERY disappointed in the sauce. I bought the “melting” cheese by Kraft. Chicken was good. Possibly will make again and use cream instead of beer???
Where do you get shaved chicken breast?
Made this for my family yesterday (my sister’s 60th birthday celebration). It was unbelievable! Everyone loved it. And that’s not an easy accomplishment when it’s a group. You all are the absolute best. My mom and I could watch the show 24 hours a day. Thanks!!
Pepper jelly was a nice touch
Partially freezing the chicken breasts helped facilitate slicing them thinly enough for cheese steak quality. But despite whisking constantly while adding cheese to the beer sauce, my sauce broke and did not have a smooth, creamy consistency. I’m not sure how to fix that but overall it’s a yummy sandwich conceptually.
I made this dish today after watching it on TV and it was quick and easy. The family loved it.
