Yield: 4 sandwiches

Ingredients

  1. 4 thin-cut chicken breasts (chicken cutlets)
  2. Kosher salt and freshly ground black pepper
  3. 1 cup all-purpose flour
  4. 1 teaspoon cayenne pepper
  5. 1 large egg, lightly beaten
  6. 1/4 cup buttermilk
  7. 1 tablespoon plus 1 cup Louisiana-style hot sauce
  8. 1 cup panko breadcrumbs
  9. 6 tablespoons salted butter, melted
  10. 1/4 cup olive oil
  11. 4 toasted buns
  12. 1/2 cup pickle chips, drained

Instructions

  1. Sprinkle the chicken breast with salt and pepper and set aside. Mix the flour and cayenne in a shallow dish or bowl. Stir together the egg, buttermilk and 1 tablespoon hot sauce in a second shallow dish or bowl. Add the breadcrumbs to a third shallow dish. Coat each chicken breast by dredging in the flour mix, then dipping in the egg/buttermilk mixture and then finally in the breadcrumbs. Set aside.
  2. To a bowl, add the remaining cup of Louisiana hot sauce and 2 tablespoons of the melted butter. Mix together and set aside.
  3. Heat the olive oil and remaining 4 tablespoons butter in a large skillet over a medium heat. When the oil is hot and the butter has melted, add the chicken pieces to the skillet and fry until golden and cooked through, about 4 minutes per side. Remove and set aside. One by one dip the crisp chicken into the Louisiana hot sauce and butter mixture, turning to coat completely.
  4. Serve on the toasted buns with tons of pickles.

Great recipe! Chose not to coat the chicken with the sauce. We didn’t need it. Will certainly make again. Make sure your chicken is thin to prevent burning on the outside.

The recipe was very wastefull of ingredients and the end product was okay at best. Extremely dissapointed with the recipe. Also, olive oil is a bad choice for frying as it is not a neutral oil, and mixing with butter does not work well as butter burns.

We’ve made these sandwiches so many times. It’s a knock off of Wendy’s spicy chicken sandwich. She called her sauce “Louisiana hot sauce”. She actually used Frank’s RedHot original which is a cayenne Pepper sauce usually used on Buffalo wings.

DELICIOUS!  Thank you Ree!  The coating was so crispy and the chicken was amazingly moist!  Love the hot sauce and extra pickles! Excellent game day lunch!

This was a spectacular sammy. Easy to make and full of flavor. Easy to customize too… we added slaw for some crunch and skipped the pickles.

My family all really like this.  The chicken was very tender.  It wasn’t overly spicy, Easy to make.

Awesome recipe! We all loved it, I made it just like the recipe says to but did not dunk it in the hot sauce after since some  us of don’t like overly spicy food but had the hot sauce on the table so that those who wanted more heat could add it to their sandwiches. Everyone wants to know when I’m going to make it again.
