Ingredients

  1. 1/2 cup whipped cream cheese
  2. 2 tablespoons chopped chives
  3. Zest and juice of 1/2 lemon
  4. Kosher salt and freshly ground black pepper
  5. 8 thin slices white bread, such as Pepperidge Farm
  6. 1/2 English cucumber, thinly sliced
  7. 6 ounces thinly sliced roast beef
  8. 1 stick (8 tablespoons) unsalted butter, at room temperature
  9. 2 1/2 tablespoons minced fresh dill
  10. Kosher salt and freshly ground black pepper
  11. 8 thin slices white bread, such as Pepperidge Farm
  12. 6 ounces thinly sliced deli ham
  13. 4 slices Cheddar

Instructions

  1. For the roast beef with cucumber and chive cream cheese: Combine the cream cheese, chives and lemon zest and juice in a medium mixing bowl. Season with salt and pepper, mixing together to blend.
  2. Spread 1 tablespoon of the chive cream cheese onto each slice of bread. Top 4 of the bread slices with a thin layer of cucumber, 2 slices of roast beef and another slice of bread (making 4 sandwiches).
  3. For the ham and cheddar with dill butter: Combine the butter and dill in a medium mixing bowl. Season with salt and pepper, mixing together to blend.
  4. Spread 1 tablespoon of the dill butter onto each slice of bread. Top 4 of the bread slices with 2 slices of ham, 1 slice of cheese and another slice of bread (making 4 sandwiches).

I loved these …. I bought the cream cheese with the chives already in it. The thin bread does make a difference.
