Ranch Chicken Sandwiches

Ingredients

  1. 1/4 cup plus 2 tablespoons buttermilk
  2. 2 to 3 dashes hot sauce
  3. Kosher salt and freshly ground black pepper
  4. Four 5-to-6-ounce chicken cutlets
  5. 1 small clove garlic
  6. 1/3 cup mayonnaise
  7. 2 teaspoons apple cider vinegar
  8. 2 tablespoons chopped fresh chives or scallions
  9. 4 slices pepper Jack cheese
  10. 4 kaiser or onion rolls, split and toasted
  11. Lettuce leaves and tomato slices, for topping
  12. Potato chips, for serving (optional)

Instructions

  1. Preheat a grill or grill pan to medium high. Combine 1/4 cup buttermilk, the hot sauce, 1/2 teaspoon salt, and pepper to taste in a large bowl. Add the chicken and turn to coat; let stand 10 minutes.
  2. Meanwhile, make the ranch sauce: Mince the garlic with 1/4 teaspoon salt on a cutting board; mash with the flat side of a chef’s knife to make a paste. Combine the garlic paste, mayonnaise, vinegar, the remaining 2 tablespoons buttermilk and the chives in a small bowl. Season with salt and pepper.
  3. Transfer the chicken to the grill, letting the excess marinade drip off. Grill until marked on the bottom, 3 to 4 minutes, then flip the chicken, top each piece with a slice of cheese and continue grilling until just cooked through, 2 to 4 more minutes.
  4. Spread each roll with some of the ranch sauce and fill with the chicken, lettuce and tomato. Serve with potato chips.

This was a big hit. I didn’t want to fire up the grill so I cooked up a couple of slices of bacon then cooked the chicken in the bacon grease and put bacon on the sandwiches.
The ranch was good too.

This recipe was repeated on demand from my daughter couple of time a week, and am a novice in cooking, as in barely cook anything. I have starter marinating it longer now. Great as a grilled sandwich with pepper jack cheese and siracha mayo

I love these – they’re a repeat in my house! I do marinate for a lot longer, and I like to add avocado to the dressing, for an avocado-ranch dressing, spruces it up that much more!

10 minutes is not enough time for the chicken to marinate. I made the recipe exactly as written. My 11 year old gave the sandwich a rating of 7 out of 10, and my husband gave a 6 out of 10 due primarily to the lack of flavor. They are fine, just not fabulous.

Made these for a BBQ with friends and everyone loved! I did marinate the chicken for about 2 hours so I could make ahead of time. The chicken was very juicy and flavorful. The dressing was perfect to go with it also.
