Not Yo Mama’s Muffuletta

Ingredients

  1. 3 tablespoons red wine vinegar
  2. 2 tablespoons minced shallots
  3. 1/4 cup olive oil
  4. 1 teaspoon dried oregano
  5. 1 teaspoon coarsely ground black pepper
  6. 1/2 cup pickled okra, finely chopped
  7. 1/2 cup pitted mixed olives, finely chopped
  8. 1/2 cup roasted red peppers, finely chopped
  9. 1/4 cup capers, drained and roughly chopped
  10. 1/4 cup fresh flat-leaf parsley leaves, chopped
  11. One 8- to 9-inch round loaf muffuletta
  12. 6 ounces sliced provolone
  13. 6 ounces sliced mortadella
  14. 6 ounces sliced salami
  15. 1/4 red onion, thinly sliced
  16. 4 hard-boiled eggs, sliced 1/4-inch thick

Instructions

  1. Place the vinegar and shallots in a mixing bowl. Gradually stream in the oil while whisking. Add in the oregano and black pepper, and mix. Add the okra, olives, red peppers, capers and parsley. Mix and set aside.
  2. Split the bread lengthwise. Spread 1/2 cup of the olive mixture on the bottom slice of bread. Arrange the provolone over the olive mixture, then layer the mortadella, salami, red onions and sliced eggs.
  3. Finish with another 1/2 cup of the olive mixture. Place the top half of the bread on the sandwich. Wrap the sandwich in plastic wrap, then weigh it down to press flat, and refrigerate for 1 hour.
  4. Unwrap the sandwich and slice into quarters to serve.
