Yield: 12 mini subs

Ingredients

  1. 12 frozen dinner rolls, thawed and risen
  2. 6 slices provolone, halved
  3. 3/4 cup marinara sauce, plus more for serving
  4. 12 frozen Italian meatballs, thawed
  5. 1/2 cup sliced deli peppers
  6. 3 tablespoons olive oil
  7. 1 tablespoon grated Parmesan
  8. Pinch of crushed red pepper flakes

Instructions

  1. Preheat the oven to 375 degrees F. Line the bottom of a sheet pan with parchment paper.
  2. Flatten each roll into a 6-inch round. Onto each flattened roll, add a half slice of provolone, 1 tablespoon of marinara sauce, a meatball and, finally, a slice of the deli peppers.
  3. Fold opposite sides of each roll up and over the meatball, pinching them together. Continue folding and pinching the sides together until the meatball and filling are completely encased in the dough. Place seam-side down onto the prepared sheet pan.
  4. Mix together the olive oil, Parmesan and red pepper flakes in a small bowl. Brush the top of each roll with the mixture. Bake until golden and crisp, 16 to 18 minutes. Serve with warm marinara on the side.

Yuck, mine didn’t turn out good, I must have gotten the wrong type of rolls, it tasted terrible, it tasted to doughy.

This was a big hit with the kids!!

I used vegan meatballs by gardein and vegan provolone cheese. The yeast roll dough I used was also vegan. I was pleased with the final product. Even though it is not a low calorie meal, I was pleased that I could make a vegan variation of Ree’s recipe. Definitely something I would make again when I want to splurge on my calorie intake!

Loved the flavor of these but my rolls were difficult to work with and crumbled easily. Any suggestions? I used Sister Schubert’s frozen dinner rolls.

My family loved these. The only thing I would do differently next time is to add two meatballs instead of one. They were very good.
