Ladd’s Chicken Bacon Sliders

Ingredients

  1. 1/4 cup honey
  2. 1/4 cup Dijon mustard
  3. Juice of 1 lemon
  4. 1/2 teaspoon paprika
  5. 1/4 teaspoon kosher salt
  6. Pinch freshly ground black pepper
  7. Pinch crushed red pepper flakes
  8. 4 chicken cutlets, each cut in three uniform pieces
  9. One 12-ounce/12-count package King’s Hawaiian sweet rolls
  10. 1/4 cup (4 tablespoons) salted butter, melted
  11. 2 tablespoons everything bagel seasoning
  12. 6 slices bacon, cooked crisp and halved
  13. 6 slices sharp Cheddar, halved
  14. 3/4 cup ranch dressing
  15. 12 small Bibb lettuce leaves
  16. 12 thin slices Roma tomato
  17. 3/4 cup canned fried onions
  18. 1/2 cup jarred pickled jalapeños, drained

Instructions

  1. For the marinade: Combine the honey, Dijon mustard, lemon juice, paprika, salt, pepper and crushed red pepper flakes in a large bowl.
  2. Add the chicken cutlets and toss to coat. You can the cook the cutlets straight away or cover and marinate in the fridge for a couple of hours or overnight.
  3. For the rolls: Preheat the oven to 350 degrees F. Heat a grill or grill pan over medium-high heat.
  4. Place the rolls on a sheet pan. Brush the tops of the rolls with the melted butter and sprinkle over the seasoning. Bake to warm through and toast slightly, 5 to 6 minutes, then set aside.
  5. For the filling: Meanwhile, grill the chicken pieces for 3 to 4 minutes on the first side. Flip and top each with a halved piece of bacon and a halved piece of Cheddar. Continue to cook until the cheese is melted and the chicken is cooked through, 3 to 4 more minutes. Remove.
  6. Separate the rolls and slice in half horizontally. Place the bottoms on a platter and top each one with a tablespoon of ranch dressing, a lettuce leaf and a chicken piece. Add a slice of tomato, some fried onions and pickled jalapeños to each. Add the tops of the rolls and place a decorative toothpick through each slider. Serve.

We made these and they were a hit with everyone. Forgot to cut the cheese slices in half so will do that next time but didn’t change anything else this time around.
My son suggested next time we might open the buns and toast them on the inside as well on a griddle before serving.

We really enjoyed this, it’s a good “fun food” recipe! I made it for dinner, but think it’s more suitable as an appetizer, or finger food for a get together. Also, make your own fried onions – much tastier than the ones in the cardboard can.

These are delicious. I made them per the recipe minus the fried onions only because I forgot them. I sliced the rolls horizontally before cooking thinking it would be easier. Wrong. They are very hard to separate as others mentioned. I think next time I will buy the full size Hawaiian buns to hold all that deliciousness. I used pickled sweet-hot jalapeños. Will definitely make again. Will use the marinade on other meats as well.

These sandwiches are GOOD! I followed the recipe exactly. The marinade and the “nothing but bagel” spices are the game changers. Don’t overcook the chicken. I had chicken tenders (okay, slightly different that hers), but did not overcook them. A few minutes on each side on low grill is good. The cheddar, ranch, bacon, fried onions…just WOW!
