Hoagies with Quick Pepper Relish

Ingredients

  1. 2 tablespoons olive oil
  2. 3 Fresno chilies, stemmed, seeded and diced small
  3. 3 cloves garlic, minced
  4. 2 jalapeno peppers, stemmed, seeded and diced small
  5. 2 orange bell peppers, stemmed, seeded and diced small
  6. 1 small yellow onion, diced small
  7. 3/4 cup apple cider vinegar
  8. 1/2 cup honey
  9. 1 tablespoon mustard seeds
  10. 3 tablespoons salted butter
  11. One 14-ounce smoked sausage, cut into fourths and split open
  12. 8 slices provolone
  13. 1/2 cup mayonnaise
  14. 4 hoagie buns, toasted
  15. Green leaf lettuce, for topping

Instructions

  1. For the pepper relish: Heat the olive oil in a large skillet over medium heat. When the oil is hot, add the Fresno chiles, garlic, jalapenos, bell peppers and onion and sauté for to 4 minutes to soften. Add the vinegar, honey and mustard seeds. Bring to a boil and cook, stirring occasionally, until thickened, about 10 minutes.
  2. For the sandwiches: While the relish cooks, grease a griddle with the butter and place it over medium-high heat. When the griddle is hot, add the sausage pieces cut-side down and cook until well browned and crisp, about 3 minutes. Flip and place 2 pieces of provolone onto each sausage piece. Cook until the cheese has melted completely, another 2 to 3 minutes. Remove to a plate.
  3. Build the sandwiches by spreading the mayonnaise on the bottoms of each bun and laying on a piece of lettuce. Top each with a cheese-covered sausage piece and a generous portion of the pepper relish. Replace the top half of the buns and serve.

Saw this show and realized I had all the ingredients on hand, so I made it tonight and it was fantastic. So easy, so tasty! Will definitely put into rotation because since I cook for two, and whenever I make a dinner with sausage, I always end up with a few leftover in the freezer. As in the situation tonight! I watched this episode today and was surprised at how Ree admonished a member of the TV crew (Jessica ?). Jessica gasped at the amount of apple cider vinegar and Ree lit into her with her fixed hideous plastic smile never quivering about the number of shows shes done and her cooking success and blah blah blah. I felt really bad for Jessica and thought if this is how Ree gets her way and success, I prefer not to watch her “show” anymore. Believe me, I was insulted and repulsed at the fit that Ree demonstrated on the air. Shame on her.

Oh my gracious! Was this sandwich amazing!! I used extra jalapeño because I didn’t have fresnos, but other than that, I didn’t change a thing. And that’s saying something for me. I change everything, which is why this is my very first review here. Ignore the naysayers, I love this episode! And this sandwich was one of the best I’ve ever had!!! Thank you so much!!
