Ingredients
- 4 heirloom tomatoes, halved and seeded
- Olive oil, to drizzle
- Kosher salt and freshly ground black pepper
- Fresh thyme leaves, to season
- 4 English muffins, split
- 8 slices Swiss cheese, thinly sliced
- 8 slices Black Forest ham, thinly sliced
- 2 to 3 tablespoons butter, to coat
- 8 large eggs
- 1 tablespoon finely diced fresh chives
Instructions
- Preheat the oven to 375 degrees F. Put the tomato halves on a baking sheet, cut-side up, drizzle with oil and season with salt, pepper, and thyme. Roast the tomatoes until soft, about 30 minutes. Remove the tomatoes to a plate. Wipe the baking sheet with paper towels and place the English muffin halves on the baking sheet and toast in the oven until lightly golden brown, about 5 minutes. Top each with a slice of the cheese, return to the oven and toast until the cheese is melted, about 2 minutes. Remove and let sit while you make the eggs.
- Heat a nonstick pan over medium heat. Add the ham slices and cook until slightly crisp and warmed through. Remove the ham to a plate. Add a few tablespoons of butter to the pan, whisk 8 large eggs in a bowl, season with salt and pepper and cook over low heat until soft curds form and stir in the chives.
- Top each muffin half with a slice of ham. Top the bottom half with some of the eggs and 2 tomato halves. Combine halves to make 4 sandwiches. Serve immediately.

Reviews
As others have noted, the only similarities between the internet version of this recipe and Bobby’s TV version are the ingredients. Knowing this, I copied the internet version into a Word document, then as I watched the show I used the pause button so that I would have time to insert each of Bobby’s steps in a separate section at the end of the recipe. To me his version is so much simpler, and certainly faster. Previous viewers have stated what some of these differences are, if you missed the show.
I had a few too many cups of wine while attempting the dish… It took more time to finish of course and I destroyed a few tools but soon she came together great! Sadly I had family visiting and they was hungry. When you will be having an event it may be annoying to pull off… I am horrible around the kitchen.
Normally I simply order pizza. A large pie made by your choice can arrive around an hour. My pizza got at the office in 30 minutes exactly. I was also allowed to select the toppings 🙂
On the show, Bobby grilled the tomato slices on the indoor grill, and didn’t bake them for 30 min. in the oven. The eggs were sunny-side-ups, and he even used a cookie cutter to shape them to the size of the muffin. This recipe is totally different from the show. Why?
The english muffin egg dish says you should scramble the eggs instead of making them sunny side up and covering them up to cook the top of the egg a little bit. The picture also shows the egg yolk but the directions say scrambled. What’s up Bobby?
My husband said this may have been the best breakfast ever … better than eggs Benedict! So much better for you and so easy to make. Cooked eggs over easy and buttered muffins. Yum!!!
I just watched Bobby make this on TV, and I immediately had to go make it for breakfast. YUM!
