Grilled Mahi Mahi Sandwiches

All trips to Hawaii should include at least one stop for a mahi mahi sandwich, where the freshly caught, lightly spiced fish is the star. This grilled version is a little more extra with a dab of spicy ketchup and some fresh pineapple to compliment the fish.

Ingredients

  1. 1/4 cup ketchup
  2. 2 teaspoons soy sauce
  3. 1 teaspoon chili-garlic sauce
  4. 1/4 teaspoon toasted sesame oil
  5. Kosher salt
  6. 2 teaspoons paprika
  7. 2 teaspoons packed light brown sugar
  8. 1 teaspoon garlic powder
  9. 1/4 teaspoon cayenne pepper
  10. 4 5- to 6-ounce skinless mahi mahi fillets
  11. Freshly ground black pepper
  12. 4 Hawaiian or brioche buns, split
  13. Mayonnaise, for spreading
  14. Bibb lettuce leaves, sliced sweet onion and fresh pineapple slices, for topping

Instructions

  1. Preheat a grill to medium high. Combine the ketchup, soy sauce, chili-garlic sauce and sesame oil in a small bowl; season with a pinch of salt and set aside. Combine the paprika, brown sugar, garlic powder and cayenne in a small dish; sprinkle and rub all over the fish, then season on both sides with salt and black pepper.
  2. Toast the buns cut-side down on the grill until lightly marked, 30 seconds to 1 minute; set aside. Add the fish to the grill and cook until lightly charred and just cooked through, 4 to 5 minutes per side.
  3. Spread a thin layer of mayonnaise on the bottom buns, then spread with some of the ketchup sauce. Top each with a lettuce leaf, some sliced onion, a slice of pineapple and a piece of fish. Generously spread the top buns with more ketchup sauce and place on top of the sandwiches.

Excellent sandwich! The only thing I did differently was to throw a bit of the dry seasoning mix onto the pineapple slices & grill them with the fish.

This sandwich is the bomb!! I couldn’t find garlic chili sauce , so I added a finely chopped garlic clove to the ketchup mixture. I also grilled the pineapple. Will be making it again!!
