Ingredients
- 1/2 cup crumbled feta cheese
- 3 tablespoons good quality extra-virgin olive oil
- 2 tablespoons sherry vinegar
- 2 teaspoons Dijon mustard
- 1/8 teaspoon freshly ground black pepper
- 1/8 teaspoon kosher salt
- 1 shallot, chopped
- 1 round loaf sourdough bread, cut into 1/3-inch-thick slices
- 3 to 4 ripe tomatoes, thinly sliced
- 1/4 teaspoon kosher salt
- 1 medium cucumber or 1/2 English cucumber, peeled and sliced into thin rounds
- 1 yellow pepper, sliced into thin strips
- 2 cups arugula
- 1/4 cup roughly chopped fresh basil
- 1/4 cup roughly chopped fresh cilantro
- 1/4 teaspoon freshly ground black pepper
Instructions
- For the feta spread: Combine the feta, olive oil, vinegar, mustard, pepper, salt and shallot in the bowl of a food processor. Process until smooth.
- For the sandwich: Preheat a grill pan over medium-high heat. Grill the bread until golden brown on both sides, 2 to 3 minutes per side.
- Spread each slice of bread with some of the feta spread. Fan the tomatoes over half of the bread slices and sprinkle with half of the kosher salt. Next, fan the cucumber slices over the tomatoes. Scatter the peppers over the cucumbers; top with arugula, basil and cilantro. Sprinkle with the pepper and the remaining salt. Cover with another slice of bread. Cut each sandwich in half and serve.

I used garlic instead of shallot. I used artesian lettuce instead of arugula. This was delicious. I will make this again. It’s quick &: easy. My friends will enjoy it too. 5 stars! Lots of flavor, crunch, and very fresh tasting!
Delicious! Followed recipe exactly except I did have to add bacon to my husband’s sandwich. The feta spread was so good I will probably make this as a vegetable dip in the future. The grilled sourdough was the perfect bread for all the yummy veggies. Will definitely make again & would make a great ladies lunch treat!
Wow! I have enjoyed this sandwich for 3 days now (and I am typically not a raw tomato fan.) I would use a bit less shallot in the spread next time. (Also wondering how long the spread will last in the fridge?) This sandwich is now part of my lunch rotation. Thanks Giada!
