Fried Red Tomato Sandwich

Ingredients

  1. Vegetable oil, for frying
  2. 1 large egg
  3. 1/4 cup ground cornmeal
  4. 2 tablespoons cornstarch
  5. Kosher salt and freshly ground black pepper
  6. 1 firm large heirloom tomato, cut into 1/4- to 1/2-inch slices
  7. 2 slices white sandwich bread
  8. 2 tablespoons mayonnaise
  9. Handful fresh basil leaves

Instructions

  1. Pour vegetable oil into a skillet to a depth of about 1/4 inch and heat on high heat until hot.
  2. Break the egg into a bowl and whisk. Pour the cornmeal into a second bowl, add the cornstarch and some salt and pepper and mix.
  3. Dip the tomato slices first in the egg and then in the cornmeal mixture to coat completely. Add to the skillet and fry for 1 to 2 minutes a side.
  4. Spread both slices of bread with the mayo and sprinkle with salt and pepper. Pile the cooked tomatoes onto one of the bread slices. Place the basil leaves onto the second slice, then sandwich the slices. Cut in half and serve.

This was simple to make. I didn’t have fresh basil so I used lettuce. I was going to use Hellman’s spicy mayo but I stuck with regular Hellman’s. Next time I may try it. Easy to make but I was lazy and tried to use a fork to turn the tomatoes over. LOL

I made this sandwich tonight, and it was so delicious.  Simple and easy to make too!  I used sourdough bread and lettuce.  A definite make again.

3rd time is a charm!  Bought a not to tall heirloom sliced it in half made open face sandwich I’ve used jiffy corn muffin mix when out of corn meal also

My only complaint is that my husband and I finished them too fast! Sandwich assembled quickly and easily. My edits were that I made some Chipotle Mayo and used that instead of plain Mayo, and I used ciabatta buns instead of sandwich bread.  I would suggest trying to find the firmest barely red tomatoes you can find. (I used a beefsteak that still had some green.) My husband who is a meat and potatoes kind of guy said he could easily eat 4 if I made that many, and that we should make these for guests. 12/ 10 will make again.
