Ingredients
- 1 4-inch piece baguette
- 2 slices low-sodium applewood-smoked bacon
- 1 1/2 teaspoons store-bought pesto
- 1 1/2 teaspoons low-fat mayonnaise
- 1 spear romaine lettuce
- 2 thick slices heirloom tomato
- 1 thick slice fresh mozzarella
- Kosher salt and freshly ground pepper
Instructions
- Slice the baguette open, leaving one side attached to form a hinge. Cook the bacon in a skillet over low heat until crispy; drain on paper towels.
- Combine the pesto with the mayonnaise and smear on the bottom part of the bread. Layer the romaine on the bread, then the tomato, bacon and mozzarella. Season with salt and pepper; close the sandwich and wrap in parchment paper.

Great in the office meal!
Made this for dinner tonight and it was a success. I changed a few things since I didn’t have everything it called for. I had ciabatta bread so I used that instead. Also, my husband wanted it more meaty so I added turkey deli meat to it. It turned out really good! Loved the fresh mozzarella and the pesto/mayo spread!
This recipe is very easy and tasty, perfect summer meal. I made my own pesto instead of store bought and turned out GREAT. The combination of the mozzarella, tomato and pesto all blended together nicely.
Ok… I love pesto. And I love bacon. This recipe made me realize I don’t like them together. The pesto overwhelms it all and I really, really, really want to taste bacon when eating a BLT. Plus, fresh mozzarella is divine! Not allowed to shine like it should either. Great concept with all the ingredients, but bombs in real life. That said, I wasn’t mad and my belly was full.
I made these to take on a picnic with my husband. They were wonderful. I couldn?t believe the amount of flavor and how easy they were to put together. After walking 20 minutes with them in my picnic basket, they still held their shape and were not soggy at all. I will be making these again!

So simple, I’m embaressed I hadn’t thought of it myself! The fresh mozzarella makes it so good, and the pesto adds such a nice flavor. I’m pretty sure this will be a regular in our house!
We used turkey bacon and a very crunchy, chewy fresh baguette. This sandwich was a hit with my family. It is very simple and great to throw together for a quick lunch. The flavors are so good together I did not miss the real bacon and believe the turkey bacon tasted even better than pork.
