Chopped Cheese Sandwiches

These beefy sandwiches take me back to my New Jersey days when I would visit the city and pick one of them up at the corner bodega. Hamburger patties are browned and chopped with onions and cooked in a special seasoning blend. Then American cheese is melted on top. Scoops of the gooey mixture are then loaded on to sauced sub rolls and topped with lettuce, tomato and pickles. It’s the ultimate sandwich!

Ingredients

  1. 2 teaspoons Miss Brown’s House Seasoning, recipe follows
  2. 1 teaspoon ground cumin
  3. 1 teaspoon ground coriander
  4. 1/2 teaspoon dried oregano
  5. 1/2 teaspoon ground turmeric
  6. Pinch cayenne pepper
  7. 1/2 cup mayonnaise
  8. 1/4 cup ketchup
  9. 1 tablespoon dill pickle relish
  10. 1/4 teaspoon kosher salt
  11. 1/4 teaspoon freshly ground pepper
  12. 1 tablespoon vegetable oil
  13. 1 yellow onion, chopped (about 1 cup)
  14. Four 6-ounce ground chuck (80/20) patties
  15. Kosher salt and freshly ground black pepper
  16. 8 slices yellow American cheese
  17. 4 kaiser sub rolls
  18. Shredded lettuce, tomato slices and pickle slices, for topping
  19. 1 teaspoon garlic powder
  20. 1 teaspoon onion powder
  21. 1 teaspoon sweet paprika
  22. 1 teaspoon kosher salt
  23. 1 teaspoon freshly ground black pepper

Instructions

  1. For the seasoning: Stir together the House Seasoning, cumin, coriander, oregano, turmeric and cayenne pepper in a small bowl. Set aside.
  2. For the burger sauce: Stir together the mayonnaise, ketchup, relish, salt and pepper in a small bowl. Set aside.
  3. For the sandwiches: Heat the oil in a large cast-iron skillet over medium-high heat. Add the onion to the skillet and sprinkle with some of the seasoning. Cook until the onion begins to soften, about 3 minutes. Move the onions a bit to the side, then add the patties on top and sprinkle some more of the seasoning. As the meat begins to brown, use a metal spatula to chop it up and flip occasionally. Continue to cook until the meat is browned and the onion is tender, chopping and flipping with the spatula. Season with salt and pepper.
  4. Arrange the cheese slices on top of the chopped burger and onion. Chop a little more to incorporate the cheese.
  5. To serve, spread the burger sauce on the insides of the rolls. Top evenly with the burger mixture, lettuce, tomatoes and pickles. Drizzle with more burger sauce, if desired, and serve.
  6. Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

We loved this sandwich. It’s tasty and easy to handle when you’re eating it. Another winner, Miss Brown…!!! I had no problem with the display of the directions or ingredients.

I’m not rating the recipe. I’ve been trying to pull up the recipe through the Food Network application. I tried during the showing of the episode “Feeding the Team”. The directions do not appear for any of the recipes from this episode. The recipes cannot be saved either. The following message continues to appear “Whoops! There’s a little trouble with our server right now. Please try again later.” If you do a general search using a search engine the recipe can be found. The recipe shows in its entirety on the website but it cannot be saved to your boards. It must be printed out or followed from the website. The same goes for the other recipes from the “Feeding the Team” episode. It’s this episode only.

Just made these sandwiches. A definite change from a Sloppy Joe or Philly Cheesesteak sandwich. Definitely recommend. Not sure why those reviews below say they can’t see the directions. Definitely there.
