  1. 3 tablespoons rice vinegar
  2. 3 tablespoons fish sauce
  3. 1 apple, cut into matchsticks
  4. 1 carrot, cut into matchsticks
  5. 1 1/2 cups thinly sliced kale
  6. 1/3 cup almond butter
  7. 1/3 cup mayonnaise
  8. 2 tablespoons Sriracha (Asian chile sauce)
  9. 4 skinless, boneless chicken breasts (about 11/2 pounds)

  11. 1 teaspoon soy sauce
  12. Kosher salt
  13. 4 hero rolls, split and toasted
  14. Torn fresh basil and mint, for topping

My husband does not try new things but saw this and asked me to make it. He loves it and says its even better the next day. I do triple batches of the mayo as I find we put it on lots of things. A favorite

This Bahn Mi just fantastic. The almond butter mayo sauce is incredible and deserves to be slathered on everything. For the rolls I purchased half-baked ficelle rolls from Trader Joe’s. They were the perfect amount of crunch on the outside while being soft on the inside. I didn’t change a thing and can’t recommend this recipe enough.
