Camping Grilled Bacon, Egg and Cheese

Cook this quick and hearty breakfast on metal grill grates set over a log fire in a fire pit. As a general guideline, for low heat, set a grate over logs that are mostly ash with flickering flames. For medium heat, set a grate several inches over an active fire. Build your fire in such a way that you have both cooking temperatures available at the same time by pushing some of the logs off to the side, creating embers farther away from the active fire on the other side.

Ingredients

  1. 2 slices bacon
  2. 1 tablespoon unsalted butter, at room temperature
  3. 2 slices good-quality sturdy white bread
  4. 2 slices American cheese
  5. 1 large egg

Instructions

  1. Prepare a campfire with medium and low heat. For medium heat, set a grate several inches over the flames. For low heat, set a grate over logs that are mostly ash with flickering flames.
  2. Add the bacon and cook, flipping occasionally, until crisp, about 5 minutes. Remove and drain on paper towels. Pour off any excess bacon fat, leaving a thin film in the skillet.
  3. Butter 1 side of each slice of bread. Move the skillet to low heat and add the bread buttered-side down. Lay a slice of cheese on top of each slice of bread. Cover and cook, checking occasionally, until the bread is crisp and golden on the underside and the cheese is melted, 3 to 4 minutes. Lay the bacon on top of one slice of bread and remove both slices to a plate.
  4. Return the skillet to medium heat with any remaining fat and break the egg into it. Cook until the white is set on the bottom, 1 to 2 minutes, then flip and cook until done to your liking, about a minute more for still runny yolks. Put the egg on top of the bacon and sandwich everything together.
